Good evening, everyone. I own a 2021 RAM Sport and am currently making a few modifications. I plan to install Bilstein 5100 shocks with a 1.7-inch lift to level the truck.

I've come across a pair of used rims and tires that seem promising: Fuel Rebel 6 Rims 20 x 10 paired with Toyo Open Country 265/60R20 tires.

My concern is whether these will cause any rubbing issues?

Depends on the rims, need to check the backset/offset of the rims. Tire size I believe people can squeeze 34"s with just leveling and have little to no tire rub.
Those tires are only about 0.5" taller than the factory size that came on the truck (275/65/18 or 275/55/20 or 285/45/22) Gen5 trucks use the same diameter tire with the exception of the Rebel or TRX.

I will attach a photo. Sadly he does not know the offset. Does it say anywhere on the rim?

What size of tires & rims are currently on the truck?

If you have 18" rims with a higher profile tire, you may lose some comfort after going to the lower profile.

It depends on where your priorities are. On road or off, or lots of highway travel.
The higher profile tires are far superior for offroad adventures or comfort on bumpy highways.

I live in a rural area and spend most of my time on highways.

I have 245/75/17 BFG KO2s (E-rated, 80psi max) as winter tires and 275/55/20 Michelin Defenders for summer (LT-rated, 44psi max). I run the BFGs with a higher pressure and they're still more comfortable & forgiving on the bumps than the Michelin tires.

I may shop for another set of 17" rims when it comes time to replace the summer Michelin tires.

For my summer set up I run LT295-65-R20 E-rated (equivalent to 35) on my 20x9 factory rims with 5100 all around and the fronts set to 2.1 raised and have zero rub at full turn. I run them at 40psi (set at cold temps) and they have a great ride and feel.

Aftermarket rims, as @crash68 indicated, you'll need to know the offset and backspace to determine fitment on your truck.

I wouldn't recommend wheel spacers to get them to fit, but this is just my preference.

I see you're in Toronto, too. I'm in the Hammer area myself.

have the seller flip those rims over, usually all you need to know is stamped on the inside somewhere
