I'm going to install an amp for my door speakers and an amp for my subs. I was wondering... can I use one line out converter and just put 2 male Y's on the outputs of the line out converter to send rca to each amp?

do you know what you are going to use for speakers yet?

if it was me i would consider just one larger 4 channel amp. 2 channels to the front speakers, 2 channels bridged to your subs.
