Our cargo power outlet didn’t work this weekend when we went to use it for our e-cooler. After investigating, it turns out it isn’t plugged in anywhere under the truck. The cord isn’t that long underneath but I can’t figure out where it goes. It looks like it would be a simple fix, but I have no idea where to look for help or diagrams.

It's a 2023. I would suggest taking it in for warranty - seems like it should be simple enough for them to plug in the correct connector.

That said there should be a connector in the rear wiring harness for it somewhere. It may be wrapped up under tape or wire loom, or have a 'connector plug' in it.

Either way, I would still take it to the dealer for warranty - Stellantis needs to see the report for it so they are aware of how much their quality control isn't doing their job.
