All I know is that it has something to do with AC, but recently I’ve noticed that it starts to get wet and moisty and cold to the touch. Also not sure if its always been that way or if that’s normal. But I think it’s not supposed to get super cold.
How can I fix it if needed?

That’s the ac accumulator and yes it is supposed to get cold and produce condensation.

It's an accumulator. It will also sweat when ac is on.
As long as it is working inside cab, blowing cold air.
Your good to go.
If not then will need more info to help ya out.
