Is there a chart or thread that gives you a rough idea on wheels size rim with an offset as to how far they will stick out

That's a loaded question haha.
Depends on back spacing width and offset. Custom offsets has a list of what works, what rubs and what doesn't rub and work.

Ya, go to the custom offsets gallery and see exactly what look you’re going for, and it will tell you all the specs of the parts needed to achieve it.

I would try to keep it in the positive offset numbers at least. But to each their own. Some people like the wide/offset look...and thats fine

If you know for a fact that you don’t want to go above 35” tires then -12 to -18 looks very good without being to bro-ish. As has been said 1000 times on here if you do plan on 37s the you need to stay at +18 to +25 to keep trimming to a minimum.

I have +18 methods with 35 12.50s (milestar Patagonia) and the fit a hair beyond flush with the flares.

If you like the method nv wheels look like I have, but you want way more wide look at the method 605 NV. It comes in a 20x 12 -52 offset. It has a bigger lip as well. I myself wouldn’t get anything over 18” though.

check out my recent thread. I just tossed a +1 offset wheel on mine and it's damn close to sticking out too much.

There are. but it depends on where want the tire; under the fender/flare or extended beyond fender/flare. I hate say it but AEV and CJC off road (Method 315 Ram Edition) offer wheels Ram HD specific and will keep tires tucked, if that's the look you want.

Another consideration is most, if not all, states have laws about tires sticking out beyond the body, no fender, mud flaps etc. Is it enforced, probably not in the city, but in the county or on hiway an overzealous deputy or trooper may have an issue with it. YMMV. It's like tint and lift laws, depends on who is looking for it or doesn't bother with it unless drawing to attention to one self.

I stuck with 18X9 with a +18 offset. They are perfect pushed out to be just barely in the flares. They are right on the edge and keep most mud in the fender and not all over the truck. Plus it does not look like a Go Cart.
