Have seen them fail open, fail closed and fail stuck in between.

I think that the “Robert Shaw” design thermostat failed in the “open” position. My 1998 Chevrolet 6.5TD has what I believe is the Robert Shaw designed thermostat. It looks totally different than the 5.7 hemi thermostat that looks like the regular thermostats.I did not know they fail open, @GTyankee, I always thought only the 'failsafe' ones did that.
Well I had a bit of a struggle getting the coolant filled on mine, but she is done, yay!

Thank you to all for your help and encouraging words, that's what makes this site so awesome.
I am reasonably sure, I did a full heat up run, and when it had cooled enough to recheck, it only took about 4 oz. I will try to get somewhere I can get the nose uphill and see what happens. Are you 100% sure that all the air has been bled out of the system?
My wife's pacifica had the waterpump fail - I know what you mean about taking some time to get over the overheat!
