Single cabs tend to appeal to kids or people without kids. I know where I am most of the kids that have trucks they are crew cabs. They may have become unprofitable.
So true, that's why you just don't see very many and also why they don't last on the lots when they do show up.
Most people want a truck that's usable for more than just looks, but there are a few of us out there and we're the reason they don't sit on car lots for very long.

My kids are grown and gone from home but I have always had a regular cab pickup or 2 door cars. The wife's 4 door car was for when the family was going somewhere together. My personal interest has always been 2 doors for looks.

We picked up a 2021 RAM 3500 RCLB a few weeks back. I plan to do a flat bed build for a FWC travel truck. This is my first regular cab and first low trim truck I've ever owned and I couldn't be happier.

1500s are not available (as far as I know) as a chassis cab.

2500s are available from the factory as RC/SC with 8' bed in Tradesman and Big Horn trim.
