What would be the best type of thermostat to replace for my 08’ 5.7? The parts store guy saying 203 degrees one

Depends on what you're going for.
If you're keeping it stock, head to your local dealership and get a stock OEM replacement.
If you're looking for better, I've seen many on this forum discuss 190 and 180 t-stat replacements.
For me, I'll be going to a 190 this coming summer when I get tuned and do fan adjustments.

Regardless of what you select as a temp range, ensure you bleed the air properly.
I used to have a 6.1 and did a 190 t-stat upgrade, and bleeding the air was a ******.... took a couple of go's to get it right so my temp didn't spike.
Once it was dialed in, it was smooth sailing!

Stock OE thermostat is 203F. This will give you the best results if all you're doing is daily running and fully stock.

just make sure you burp it. just like after feeding a baby. Got to get all the air out of the system or there will be problems, later.

And make sure the bleed hole is installed UP or you'll never get the air out of the system.

if you can't get that plug out, look on the right side of the water pump,
there is a sensor & wires.
That will also work as a bleeder

if you can't get that plug out, look on the right side of the water pump,
there is a sensor & wires.
That will also work as a bleeder

The temperature sensor you are talking about is under the AC compressor in a 5.7L Hemi truck. He would be better off not trying, it's too much effort to attempt rigging anything to try that.

Yes ,that is the temp your engine will maintain +or- a few degrees. Also what goes into the heater core.

Had to replace stat from my 09 5.7Hemi several years back. Went to three different places, including dealership, the temp ranges were from 203-209. I was pulling a trailer then, so I decided to get a 195* No-Fault stat instead. Has been working great since, pretty sure it was replaced in 2014-15.

Due to the tune on my 07' Quad Cab 1500, rwd, 5.7L HEMI I run the Jet 180° thermostat, and Zrex G-05 coolant. I also have a funnel kit that works great for servicing the cooling system.

On an 08, more likely your heater core is partially blocked or the blend door isn't moving all the way. If you engine is running 200 F you should have lots of heat. They need to be flushed every 4 or 5 years to keep them working good.

What we did on the fill of coolant. We let it run pour coolant in slowly. Put radiator cap on loosely turned it off let it sit overnight Poured more coolant in next day Should be good
