I personally do not like how 285/70/17's handled on bends on dry pavement on my stock 17 x 7" wide stock wheels.
With 17X8" wheels they are fine.
Some don't mind the handling but it just felt squirrely if you hit a bump or the brakes when going around a bend - and they were E-load Michelin Defenders, not a low line tire by any stretch.
If you don't mind that I think some have gone as high as 305/70/17 with just a level.
Others have gone to a 75 aspect ratio vs. the 70 and those would probably be ok on a 17x7" rim.
Note, if you look on tirerack they do not rec. using a 285/70/17 on a 7" wide rim.
