What is the normal cooling temp you run when pulling a 11000 fifth-wheel?

I'm running cooling temps of 210 or 212 and oil temp of of 220 on a 2017 3500 H.O. running at 1900 RPM/s. My truck has 81000 miles on it.

You should provide more details like if your climbing a grade? how fast are your traveling? and outside ambient temperature? All of those will effect the operating temperature.
If you really want to know how hard your working the Cummins, pay attention to the boost pressure and pre-turbo exhaust temps, 11K lbs shouldn't be a problem though.

FYI: only the coolant and transmission temperatures are actual readings. Oil pressure and temperature are calculated values (been this way for quite a few years with the CTD).

That looks pretty normal to me.
Our 5er weighs in at 14k and my temps look pretty much the same as yours. I also tow in 5th gear with my RPM right at 1900.
This was also while towing in 100°+ temps.

My speed is 65 or 66 mph in 6th gear from mid 80s to low 90s on flat or slight grades. As the grade goes up so do the temps and stay high. I pulled a 17000 pound fifth-wheel when the truck was newer without any problems .I use to see the temps drop fast when the fan come on, the fan clutch has been replaced and the dealer has given the truck a clean bill of health. I'm just not use to these temps and want to keep this truck a long time.

Those temps of 210-212° with oil temps of 220° are not unusually high.
I don't understand what you're worried about.

Drop to 5th gear and your temps will go down. Anything below 65 I run in 5th with 3.73’s. Increasing rpm will lower egt’s and will actually increase mpg because of the lighter load on the engine through gearing.
Those are not extreme temperatures.

I run in 5th gear with my CTD when towing and keep the RPMs between 2,000 and 2,250. The only time it ever gets over 200F is when pulling hard grades. I always keep the RPMs in that range even if downshifting is required to do so.
