97 ram stalling out

97 ram 1500 5.2 keeps stalling, oil pressure light comes on when it stalls. Can turn it on fine afterwards & keep driving wherever it needs to go (but it will stall out again eventually). Noticed its when I throw it in reverse or change from R -> D. Coolant is sitting just above Min level. It's sat for a while (squirrel chewed through what I'm assuming is a vacuum hose that pumps AC/HEAT through the main vents) and we found a bit of a nest just under the air filter, cleaned out and that fixed our rough idle mostly)) replaced the plug wires a few hundred miles ago and the plugs not even ten miles ago. Also, noticed today that the truck kicked its idle up by ~1000RPM when sitting and went right back down. Somewhat unusual as I haven't noticed that before. Thoughts?

No I haven't noticed my oil pressure gauge going down or acting funky, hoping this isn't a big deal, but I don't know anyone who really has a clue

Does the coolant level ever get above the min? Sounds like the truck isn't warming up fully and the computer may be shutting it down. That is my guess.
