When I run my A/C (2023 Bighorn Ram 1500) it blows up to and creates condensation on the windshield. I have also noted when I am using the defroster and want air only to the windshield, it also blows air to my feet? What causes these issues?

Welcome to the forum.

Single or dual zone auto Heat/AC? Single zone is dial manual controls and Auto is both manual and in EVIC.

The fogging of the windshield is the temp difference between ambient temps and what your system is set on.

Venting controls in EVIC under Climate. There is also a Humidity Sensor that changes temps and venting, you may need your HVAC controls reflashed also. Since you are in Florida, your system depending if single/dual may behave differently than mine here in the middle of TX.

Sounds like the mode doors are not moving to correctly direct the airflow. If you have the AUTO option, it will move the doors automatically but should follow if you manually select them.
Given the vehicle age it's probably still under warranty. You could try pulling the battery cable for a few minutes, that may reset the HVAC system

Single zone with manual controls only. I am in Florida so I definitely set it as cold as it will go. I just question if the air blowing the the windshield (vs. the cabin) and to the floor (vs. only the windshield) indicates that something is not right?

Once again, not nearly enough info to provide any kind of useful feedback, even with the 3 posts you have made. You have not even told us what settings you are using on your manual system, temperature setting etc.

Read owners manual, it explains very clearly how it works. If not working like the manual says, go to dealer and get it checked out. Best of luck.
