I went and weighed my truck and trailer want to make sure I got this right. I used a CAT Scale for the weights same one never done this before want to make sure I understand this correctly.

So if I'm correct my trailer weight: 1, 791lbs??
Max load on trailer 7,000GVWR= 5,209lbs??

Yes your maths is correct, there's some rounding off the numbers from the scale but for conversation sakes your trailer is 1800 lbs and you can load 5200 lbs on it.
You use the trailer axle weight plus the tongue weight on the truck to get the total weight of the trailer. Then it's the tongue weight divided by the total weight of the trailer to determine the tongue percentage.
