Truck has 5100's set to 2.8 in the front, 1.5" spacers rear. Sits about a half inch higher mayyyybe in the rear, looks perfect. When we put the suspension back together, the sway bar does not seat properly whatsoever with the end links, here's a crappy comparison

/ how it sits now

It does seem to be more wobbly, and doesn't handle the same, but I also went from factory, to 34x11.5 10 ply, plus my lift all at once. Would the sway bar not being seated properly be attributing to this?

As far as the control arms, yes of course the factory ones are total crap, but the tech who installed the lift, and another shop I work with who does lifts, both said I shouldn't really need em. I've gone probably close to 1000 miles with no issues.

Just longer end links keep the sway bars parallel to the frame for best results

You raised your center of gravity, and added a 295(?) section width tire which I am assuming is a blocky tread patter. Your truck is going to walk around the road due to the tread pattern, and exhibit more lean in maneuvering due to the height which is only exacerbated by a blocky tread pattern.

That being said, you should probably add some proper length end links, but you will never achieve factory driving characteristics with a lifted truck, and offroad tires.

I'm about to do a very similar setup. Anyone know where I can find proper end links?

I mean how much difference is it really going to make to have adjustable end links? If it will not be noticable, and be just fine without them, I'd rather blow money on something else. Also, what about control arms? I'm just trying to make sure my truck suspension is solid, basically, I don't like being unsure about such a critical component to my very expensive brand new vehicle haha.
