Replaced my rear axle 2019 1500 6-lug with a used one that has an e-lock, big mistake, my truck is not set up for that option and i don't need it. Can I disengage/remove it.

without the electronics to engage it, the differential should stay unlocked. If it is locked up, backing up (or going forward) while turning on hard surfaces can be interesting.

I haven't even tried to drive it, just switched out the axle up on jack stands wheels off, testing it code lights come on wheels turn but can't build any rpm, so seems like even though you say it should be unlocked both wheels are turning, I can't return the axle, seems like I can go inside and remove the lock?

Put it on the ground and try to drive it.If only the rear tires are in the air,you might be running into issues with the wheel speed sensors,as the truck will be seeing a big differance between the front wheels that aren't turning,and the rear wheels which are turning,and will throw a code that'll light up the dash. I'd disconnect the battery for a few minutes to clear the wheel speed sensor code,then try driving it before getting all wound up over it.Both wheels will spin when it's in the air,even with an open/pegleg diff.

You would edit/delete that information from your profile, not to worry deleted it for you.

As for your axle, as mentioned both will spin no matter what type of differential but with a locker both rear wheels are locked together.
Have to ask did you verify the axle ratio? Being a Hemi it could be 3.21 or 3.92, this has to be correct or you'll have more that just error code lights on the dash when driving.

Thanks for deleting my address, codes did not clear with battery disconnect, but once I dropped it with wheels on and drove it no problem. Which made me remember 3 years ago after a rear wheel came on in Canada at 65 miles an hour I replaced the axle then too and remember the same issue when I tested it up on jack stands, memory not to good at 73, did the whole job alone two times now on my back, should of bought a different truck.
