I'm with you. Its all about that merge from 2 to 1 though. The factory Y-pipe isnt going to get you the results you are after as it is very restrictive. For best results, you are going to want a set of longtube headers, mandrel bent 3" y-pipe, and then a nice free flowing muffler to finish it off.

We have a member here that gained 66hp by going from shorties and no tune to longtubes with a custom tune.

Before - JBA shorties, modified Y-pipe into a single 3" Magnaflow catback, and stock tuning. (307HP)

After - ARH longtubes, ARH mandrel bent 3" y-pipe w/ high flow cats, single 3" Magnaflow catback, Hemifever tune. (373HP)

While this sounds good, there are too many variables to realize the true gains form any of the modifications made. I will continue to search and see what info is available. Thank you.

Just got the truck, it's stock. Plan is heads, cam, intake, exhaust.

I have full access to a dyno, so I will be testing everything.

With what you have planned, I would agree that you will see better results with a nice dual 2.5" setup. 95% of guys that just run the basic boltons and a tuner are perfectly fine with a free flowing 3" single.
